Chrissy and I went to Italy last month and traveled up and down the country in search of great food and also to research the source of some of the great ingredients we use at RigaTony’s. To that end we found ourselves in the gorgeous hills of Tuscany and took the opportunity to tour toured a Parmigiano-Reggiano cheese facility.
This cheese was first produced in the middle ages and even today, 1,000 years later, every step of its production is inspected and protected by the government like the national resource that it is. I apologize in advance to the length and technical nature of the video but if this is your favorite cheese like it is mine, then you’ll appreciate it. – Mike
